Okra

Okra also known as 'Abelmoschus esculentus,' 'bhendi' or ladies finger is an important vegetable in tropical countries like India. Okra is available in India throughout the year making it the largest producer of the vegetable in the world. It is a fresh green vegetable with tapering ends and edible seeds. Cooking releases a slimy juice which often works as a thickening agent. The vegetable has gained popularity as it is a good source of vitamin A and folic acid, carbohydrates, phosphorus, magnesium and potassium. It is good for people suffering from renal colic, lecorrhoea and general weakness.

Baby Corn

Baby corn or 'candle corn' is a young finger-like unfertilized cob of maize that is harvested early while the ears are very small and immature. It can be eaten raw or cooked. Baby corn is known for being rich in proteins, vitamins and iron; and is also one of the richest sources of phosphorus. Besides, since it is rich in fibrous protein and easy to digest, it is used extensively the preparation of baby foods.

Chillies

Whether red or green, chillies have a rich colour with a healthy unblemished skin and packed with flavour. Due to a high degree of capsaicin, they exhibit a hot taste whether eaten raw or cooked; and form the major ingredient in curry powder. Chillies are rich in proteins and vitamins like Thiamine, Riboflavin and Vitamin C. Traditionally, they were used to ease arthritis and rheumatism, and also worked as a cure for dyspepsia, flatulence, and toothache.
